These Chocolate Chip Banana Mini Muffins are an amazingly delicious snack that are healthy enough to eat as an anytime snack, but sweet enough for dessert too!
So if I had a choice, I would bake rather than cook any day. Of course, I have a choice, however, I still need to cook every day for my family (or at least most days).
And we really shouldn’t live off muffins and cookies, right?!
I’ve cut way back on baking since I started my school nutrition job but I took advantage of a few days off during winter break and made these amazing chocolate chip banana mini muffins.
There is an unofficial blogging “rule” that says you shouldn’t use the word moist, like EVER.
People apparently overwhelmingly dislike the word, think it’s unappealing etc. However, when it comes to a recipe like these muffins sometimes you just can’t help it!
Honestly, these muffins taste so delicious and “moist” that they taste like a homemade (boxed) cake mix.
The good cake mix that is (that’s if you like the taste of cake mix like my family does).
I can’t help but use the word “moist” since that’s exactly what they are. And the fantastic part about this recipe is that it’s basically a banana bread recipe with sour cream, cocoa powder and chocolate chips added.
That’s it.
You can easily make this into a loaf, but that takes much longer to cook.
And I like making the mini muffins since they are much more kid-friendly and help with portion control. And by portion control, I’m mainly speaking of myself since I could have easily eaten half a loaf!
Obviously my little man couldn’t wait to try them since he saw CHOCOLATE and came running!

Chocolate Chip Banana Mini Muffins
Ingredients
- 1/3 cup butter softened
- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 3 bananas mashed
- 1/4 cup applesauce unsweetened
- 1/4 cup sour cream
- 1 cup all purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup walnuts chopped
- 1 cup milk chocolate chips
Instructions
- Preheat oven to 350ºF. Spray a mini muffin pan with non-stick cooking spray.
- Blend butter, brown sugar and granulated sugar until mixed well.
- Blend in egg, vanilla, banana, applesauce and sour cream. Mix until well blended.
- Stir in flour, cocoa powder, baking soda, baking powder and salt.
- Stir in walnuts.
- Evenly divide mixture into mini muffin pan.
- Top each muffin with chocolate chips.
- Bake for 15-20 minutes or until baked thoroughly.
