Jump to RecipeI hope you all had a fantastic Father’s Day weekend! Our family went on our first camping trip this year and it was quite the adventure (as expected with a 1 year old, 3 year old, and 4 year old).
The kids had an absolute blast while Dan and I well…we’re exhausted. But it was still awesome to spend the entire weekend together nonetheless.
I enjoyed it more than last summer when our youngest was only 6 months old and was a “challenging” baby, so this was a MUCH easier experience!
We hope that the more we go camping, the more our kids will grow to appreciate the outdoors and fall in love with it like we have!
Anyone else enjoy camping? Don’t get me wrong, it’s a lot of work, but well worth it.
So now onto this simple dessert. And no, I did NOT bring it camping.
I don’t typically make fruit desserts since I’m a chocolate lover. However, I know my dad and husband enjoy them so I chose this strawberry pie.
And it just happens to be perfect timing for Father’s Day. We’re actually celebrating it today so I can’t tell you how much they enjoyed it but I can bet they are going to love it.
I decided to take a more simple recipe and add mashed strawberries to the filling to make it extra sweet. And I think it turned out fantastic (of course I sampled it quite a bit). Even for a chocolate lover, this pie makes the grade.

Dietitian’s Dish
This time I used reduced fat “cream cheese.” I placed cream cheese in quotes because it’s actually not cream cheese but you likely would never know it. By law, cream cheese is required to have a minimum milk fat content of 33 percent by weight and a maximum moisture content of 55 percent by weight.
So what I actually used was Neufchâtel cheese. It’s marketed as low-fat or reduced-fat cream cheese, in the same packaging style and size. But if you look closely it will say Neufchâtel cheese.
I like to use the reduced-fat option since it cuts down on saturated fat and calories yet still maintains a delicious flavor.
And one of the best parts about this recipe is that it takes about 10 minutes to make!
No Bake Strawberry Pie
Ingredients
- 8 oz. Neufchatel cheese lite cream cheese, softened
- 2 teaspoon vanilla extract
- 1/4 cup sugar
- 1 cup strawberries mashed
- 8 oz. container whipped cream thawed
- Extra stawberries for topping
- graham cracker crust
Instructions
- Beat Neufchatel cheese with a mixer until fluffy.
- Add sugar, vanilla and mashed strawberries and mix until combined.
- Stir in whipped topping until combined.
- Add filling to a graham cracker crust.
- Top with sliced strawberries.
- Refrigerate for at least 2 hours or until ready to serve.

This looks amazing! I've always wondered how Neufchatel cheese worked so I am glad to see that it is very similar to cream cheese. Recipe is officially pinned and on my "to-make" list. I bet it would be great with blueberries or raspberries too, yum!!
