Brussels sprouts are probably the ONLY vegetable that I could say I don’t like…until now! Thanks to my 5-year-old, I have not only expanded my kids’ veggie selection but also my own!
A few weeks ago I took all three of my kids to the produce store and let them pick out either a fruit or vegetables of their choosing. And to my surprise, my oldest picked Brussels sprouts!?
I try really hard not to influence my children’s preferences with my own opinions. But I have to say this was a hard one!
I also really don’t like throwing out food and I was NOT convinced that Brussels sprouts would be a hit in my house.
Thankfully, we brought them home and I researched a few different ways to cook them. I discovered that a lot of people sweeten them with honey or maple syrup.
So I thought I would try roasting them since I already know my kids love the texture of roasted vegetables. I also thought adding a sweetener like maple syrup would be a great way to counteract the bitter flavor of Brussels sprouts.
My mom is the only one I know who likes Brussels sprouts and will typically just steam them. For me, this cooking technique always left too much of the strong bitter taste found in Brussels sprouts which I couldn’t get past.
But roasting them and adding maple syrup gives them an entirely new taste!
I’m so glad I had an open mind when my son picked out a “unique” vegetable to try!
This once again proves you should experiment with different cooking techniques before giving up on a certain type of food.
You never know when you may find out you enjoy one cooking technique over another.

A 1/2 cup of Brussels sprouts contains only 28 calories, is packed with nutrients like 2 grams of fiber, 2 grams of protein and antioxidants!
Roasted Brussels Sprouts with Maple Syrup
Equipment
- rimmed baking pan
Ingredients
- 2 pounds Brussels sprouts, cut into halves
- 1 tablespoon garlic powder
- 1/2 teaspoon dried thyme leaves
- 1 tablespoon maple syrup
- salt and black pepper to taste
- olive oil (to coat pan)
Instructions
- Preheat oven to 400°F. Coat a rimmed baking pan with olive oil (I use the Misto sprayer).
- Place Brussels sprouts in a single layer on the pan.
- Sprinkle seasonings over Brussels sprouts.
- Cook for 20-25 minutes or until Brussels sprouts are darkened.
- Place Brussels sprouts and maple syrup in a bowl, stir gently.
