When I was single Valentine’s Day seemed to be more important compared to when I had a boyfriend (and now husband). Maybe the hype isn’t what it’s made out to be, or maybe I don’t need a holiday to feel loved.
Whatever it is, Valentine’s Day sure has changed over the past several years for me, but not in a bad way.
Just thinking about this holiday has made me reflect on the last several years since Dan and I met.
In the ten years that Dan and I have known each other, we’ve been through quite a bit (law school (him), grad school-me, had 3 babies in 3 years, job changes, and much much more!).
And life is not slowing down any time soon.
This is one reason I thought I’d create a round-up of healthy, yet not-so-complicated recipes to make on Valentine’s Day.
Of course I love to celebrate pretty much anything by going out to dinner any spending quality time with Dan but that’s not always possible.
So I thought I’d do a round-up of healthy, yet romantic Valentine’s Day recipes (from fellow dietitians) for those wanting to stay in for the night but still enjoy a nice dinner (obviously after the kids’ bedtime).
