Last year I purchased a turkey the week after Thanksgiving and froze it.
This past week I cooked the entire turkey (using a bag which is so simple!). And I have made several meals from the turkey, including this delicious soup.
Honestly, I had forgotten about the turkey until I started cleaning out my cabinets and freezer. I was working on minimizing the number of things I need to transfer when we move into our new house.
Regardless, it definitely is an easy way to save some money.

Dietitian’s Dish
It’s great to have leftover turkey but make sure to eat it safely.
If you don’t think your family will be able to eat an entire turkey within 3 or 4 days, I would suggest buying a fresh turkey and cooking it, then freezing the leftovers.
This is because it’s not advised to refreeze meat that has already been frozen and thawed once.
And, make sure to put any turkey (like most foods) back into the refrigerator within 2 hours to reduce the risk of foodborne illnesses.
Leftover Turkey and Bean Soup
Ingredients
- 2 tablespoons olive oil
- 3 teaspoons minced garlic
- 1 onion, chopped
- 2 carrots, chopped
- 3 celery stalks, chopped
- 1 teaspoon dried sage
- 1 teaspoon dried thyme leaves
- 1 teaspoon poultry seasoning
- 1 bay leaf
- black pepper and salt to taste
- 1 (15 ounce) can black beans
- 1 (15 ounce) can great northern beans
- 1 (15 ounce) can dark kidney beans
- 4 cups chicken broth
- 2 cups cooked turkey, chopped
Instructions
- Heat olive oil over medium heat in a dutch oven or large pot. Add minced garlic, onion, carrots and celery. Sauté until vegetables are tender.
- Add seasonings.
- Add chicken broth and turkey to pot and simmer for about 10-15 minutes.
