This week began the third week of school for our kids, but this is our first full week. I enjoyed the slow start of the school year since it means the kids are a bit less tired.
This doesn’t mean the hustle and bustle of the school year hasn’t fazed them. It’s just affected them a little less than usual.
For example, we pretty much just hung out this past weekend staying at home, watching movies, versus being on the go. It was nice for a change, especially since I’m feeling a bit under the weather.
And with me being back to work for a few weeks now, meal planning has become very important once again.
I’m still focused on serving my family a variety of nutritious foods. Now, I just need to pay more attention and plan meals ahead of time compared to the summer when I have more free time.
I make quick stops at our local grocery store on my way home from work at least once a week and then do one larger grocery store trip or Sam’s Club visit on the weekend.
Shortcuts to Making This Steak Pad Thai
So even though I am still focusing on serving my family nutritious foods, it doesn’t mean that I don’t look for shortcuts whenever possible.
For example, I often buy large bags of frozen vegetables that can be microwaved in the bag and be ready in 5 minutes, like the broccoli used in this recipe.
I also used pre-made Pad Thai sauce for this recipe. Of course, you can make your own sauce, but when time is an issue I’d much rather serve my family a homemade meal with a jarred sauce versus take out.

30 Minute Steak Pad Thai
Ingredients
- 1 pound top sirloin steak cut into slices
- 1 egg
- 2 cups broccoli
- 1/2 cup carrots shredded
- 1/2 cup bean sprouts
- 8 ounces rice noodles
- 1 (8 ounce) jar Pad Thai sauce
- 2 green onions chopped
- 2 tablespoons olive oil
- 1/4 cup peanuts optional
- black pepper and salt to taste
Instructions
- Cook noodles according to directions.
- Add olive oil to large skillet over medium heat.
- Add egg to skillet, scramble lightly. Add steak slices and season with black pepper and salt. Cook for about 3-5 minutes per side.
- Add broccoli, carrots and bean sprouts. Cook for about 5 minutes.
- Add noodles and Pad Thai sauce. Stir to coat.
- Top with green onions and peanuts.
