This Avocado Mango Smoothie is a fantastic combo of nutritious ingredients and is the perfect afternoon snack on warm spring or summer days!
Don’t you love when another adult influences your children in a positive way?
Just this past week my son’s 2nd grade teacher made an impact on my son likely without even knowing it.
JP came home asking me to buy avocado since his teacher eats it and he would like to try it. So, I added it to my grocery list immediately and purchased them on my next grocery trip.
When I brought them home I decided to make avocado mango smoothies. I wanted to make them when JP was home to help or watch if he’d like.
As he watched me cut open the avocado he continued to tell me how his teacher enjoys them. JP said his teacher carries half of an avocado around and just eats it right from the skin.
Since avocados have a distinct taste, in my opinion, I decided a smoothie would be the best route to take. I thought it was the easiest way for my kids to enjoy it.
They have tasted it in guacamole in the past but JP didn’t realize it contained avocado at the time.
Note to self: make homemade guacamole once in a while so my kids can learn to understand what ingredients makeup recipes!
So to be honest, I needed to add a bit more fruit and honey for their taste buds. But I don’t mind, I’m so glad they tried something new! And after JP tried some of the other half of the avocado.
I used the rest in one of my favorite non-lettuce salads, this Corn Black Bean & Avocado Salad.
Avocado Mango Smoothie
Ingredients
- 1/2 avocado
- 1 cup mango cubed
- 1 cup spinach
- 1 banana frozen
- 2 tablespoons peanut butter
- 2 tablespoons honey
- 1 cup milk
Instructions
- Blend all ingredients together until smooth.
- Serve immediately.
