These Baked Beef and Black Bean Nachos are a simple way to serve nachos at home but a much healthier version that only takes 10 minutes to bake!
This past week has been one of the longest I’ve had in quite a while.
It started with strep throat for me, then three days later my son being diagnosed with strep throat and my daughter with an ear infection.
So that’s three of us on antibiotics. Thank goodness for modern-day medicine!
A week later and we’re finally all healthy and can enjoy summer! And now I can get back to cooking!
Now onto this super simple recipe.
I’ve come up with another way to enjoy delicious Mexican food but much healthier.
And the best part is that it only takes 20 minutes to make!
And when you’re sick or have sick children the last thing you want to do is spend time in the kitchen.
Dietitian’s Dish
Family meals are such an essential part of raising healthy eaters. With three children 5 and under, I’ve experienced my fair share of picky eaters.
Thankfully I have used some strategies that have really helped make mealtime less stressful.
Another important but often overlooked strategy is eating together as a family.
Research shows that when children eat together with their parents and are served the same food, they are much more likely to eat the food offered.
This is definitely very true with my own family. When we eat together as a family my kids are much more likely (and surprisingly) willing to eat new foods.
Baked Beef and Black Bean Nachos
Ingredients
- 3-4 cups tortilla chips
- 1 pound lean ground beef
- 3 tablespoons 1 packet taco seasoning
- 1 cup salsa
- 1 15 ounce can black beans, drained and rinsed
- 2 cups 2% Mexican cheese shredded
- toppings: cilantro tomatoes, green onions, avocado, sour cream
Instructions
- Preheat oven to 350°F. Spray a rimmed baking sheet with non-stick cooking spray.
- Over medium heat, add ground beef and taco seasoning to a skillet. Cook ground beef until no longer pink.
- Stir in salsa and remove from heat.
- Spread tortilla chips out evenly on a rimmed baking pan.
- Sprinkle cheese over top of tortilla chips.
- Place in preheated oven for 3-5 minutes.
- Remove and top with beef/salsa mix, and black beans.
- Return pan to oven for another 5 minutes.
- Top with additional toppings as desired.
