These Baked Cinnamon Apple Dumplings, made with refrigerated biscuits, are an amazingly delicious treat to enjoy this fall!
Apparently, I like to make indulgent treats during the fall. You’d think I’d make more during Christmas time but there must be something about the weather getting cooler. And school starting that makes me want to make sweets.
Oh, and my love of apple orchards and cider mills (especially cider donuts!) probably play a role in creating a plethora of apple recipes.
Because besides eating them plain, which of course you can do, what else are you going to do with pounds of apples?!

Thankfully this past week has slowed down just a bit. I have had a chance to breathe and consider making something that is not dinner-focused.
That’s when I came up with the idea to use refrigerated biscuits for this apple dumpling recipe. Using biscuits saves so much time yet you still get the delicious flavors that come from the dough and the apple filling.
So start stocking up on apples this fall and enjoy!
Baked Apple Cinnamon Mini Dumplings
Ingredients
- 1 16.3 ounce can flaky biscuits, separated and cut into quartered
Apple Pie Filling
- 2 medium apples about 2 cups chopped
- 1 tablespoon lemon juice
- 2 tablespoons butter
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup + 1 tablespoon water
- 1 tablespoon cornstarch
- vanilla ice cream
Instructions
- Preheat oven to 350°F. Coat a medium size casserole dish with non-stick cooking spray.
- Combine apples and lemon juice in a bowl. Set aside.
- In a medium sauce pan melt butter. Add brown sugar, cinnamon, nutmeg, apples and 1/4 cup water.
- Simmer for about 5 minutes or until apples are tender.
- Combine remaining 1 tablespoon of water with cornstarch. Mix until combined.
- Add cornstarch/water mixture to apples in pan. Stir until combined.
- Pour apple mixture to a large bowl with biscuits.
- Add to casserole dish.
- Bake for about 25 minutes or until top is golden brown.
- Serve with vanilla ice cream.
