Today I bring you an easy overnight breakfast casserole to liven up your morning routine without taking up any valuable morning time.
I can guarantee this casserole will be such a hit with your family that you may even want to enjoy it for brinner too!
Our summer has sadly ended already since school began this past week. I’ve also been back in my school nutrition job for a few weeks as well.
I know most people feel this way too, but I definitely can say this summer went by way too fast!
Starting school before Labor Day for the first time sure does not help. We are however made the most of the weekend by camping with several neighborhood friends.
While we have enjoyed this casserole numerous times over the past few months on lazy summer days, I can’t wait to make it on the weekends and just reheat in the mornings during the busy weekdays.
Of course, this casserole would also be an excellent addition to a holiday brunch too.

Overnight Apple Streusel French Toast Casserole
Ingredients
- 1 loaf sourdough bread, cut into cubes
- 8 eggs
- 3 cups skim milk
- 1/2 cup brown sugar
- 1/2 cup maple syrup
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups apples, chopped (your favorite variety)
Streusel Topping
- 4 tablespoons butter, cold
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Optional toppings: pecans, powdered sugar, whipped topping, maple syrup
Instructions
- Spray a 9 x 13 in pan with non-stick cooking spray. Add bread cubes to pan.
- In a bowl mix together eggs, milk, brown sugar, maple syrup, vanilla extract, cinnamon, nutmeg and salt.
- Pour mixture over breadcrumbs in a large bowl. Cover and refrigerate overnight or for at least 8 hours.
- When ready to assemble, pour bread mixture into pan. Top with cubed apples.
Streusel Topping
- To make streusel topping combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands or a pastry blender until you have a crumbly mixture.
- Bake at 350°F for 45 minutes, then remove from oven and evenly add streusel topping to top of apples. Bake for an additional 15 minutes.
- Serve with desired toppings.
