These BBQ Chicken & Pineapple Quesadillas are a perfect blend of sweet and tangy bringing you a delicious and quick lunch or dinner!
I had one of my favorite slow cooker recipes in mind when I decided to make these quesadillas. I’m a big fan of barbecue sauce and pineapple since it’s such a simple combination yet brings such amazing flavors together. And as usual, this recipe is quite versatile. For example, this time I used shredded chicken that I made in my slow cooker, but you can easily use grilled chicken breasts or even rotisserie chicken.
And 10 minutes of prep needed to make this recipe is also a huge bonus.
And of course you could save even more time without making the tangy dip, but trust me it’s worth it. I honestly have not make too many homemade dips with yogurt but I’m so glad I did! This tangy Greek dip is the perfect addition to this quesadilla. Trust me!

For example, consuming diary products is simple way to increase your nutrient intake without much thought. Drinking just one glass (8 oz.) of milk can provide you with an array of nutrients including protein, calcium, vitamin A, vitamin D, riboflavin and phosphorus.

Ingredients
- 2 cups shredded cooked chicken
- 1/4 cup pineapple chunks
- 3/4 cup honey barbecue sauce
- 1 cup 2% Colby and Monterey Jack cheese, shredded
- olive oil
- 1 teaspoon minced garlic
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
Instructions
- Mix shredded chicken and barbecue sauce together.
- Spray one side of tortilla with olive oil and place on skillet.
- Add to one side of each tortilla: about 1/2 cup shredded chicken, 1 tablespoon black beans, 2 tablespoons cheese, and 1 tablespoon pineapple, followed by another 2 tablespoons of cheese.
- Fold tortilla in half and grill each side evenly.
