This Beef Stir Fry is an excellent meal to put together on busy weekday nights and takes less than 30 minutes from prep to table.
Fall has definitely arrived in Michigan and I LOVE it!
It’s not only cider mill and apple picking time, but also college football and cozy sweatshirt-wearing weather!
My family is trying to enjoy the particularly warm fall weather we’ve had so far so why waste time in the kitchen?!
I’m not sure why I don’t make stir-fries more often, because they are simple, healthy and so versatile!
This stir fry is full of bell peppers but feel free to add any vegetables you enjoy.
Dietitian’s Dish
Top round steak is one of over 38 beef cuts that fall into the lean category.
A 3-ounce serving (about the size of a deck of cards or iPhone) of top round steak contains only 157 calories, 5 grams of total fat and 2 grams of saturated fat.
It’s also high in protein and several other nutrients including iron and B-vitamins to help maintain muscle mass, keep you satisfied and help you maintain a healthy weight (all while enjoying lean beef in proper portion sizes).
Beef Stir Fry with Bell Peppers
Ingredients
- 2 tablespoons sesame oil
- 2 teaspoons minced garlic
- 1 large onion sliced
- 1 green pepper sliced
- 1 red pepper sliced
- 1 orange pepper sliced
- 1 pound top round steak sliced thin
- 1 can beef broth low-sodium
- 3 tablespoons cornstarch
- 1 tablespoon soy sauce reduced sodium
Instructions
- Whisk together beef broth, cornstarch and soy sauce. Set aside.
- Over medium-high heat, add oil to a large wok or frying pan.
- Add vegetables and cook until tender.
- Add steak to pan and cook until done.
- Add beef broth mix to pan and stir until sauce thickens.
