In previous years, the holiday season always seems to sneak up on me. This leads to me poorly planning holiday meals and purchasing last-minute presents.
Well, this year I am determined to get ahead of schedule. That’s why I have already created this delicious side dish for Thanksgiving (as a trial). And I’m already purchasing Christmas presents.
When it comes to cooking for holidays, we typically have Thanksgiving at my parent’s house or at our house. And then everyone pitches in to bring a side dish.
Thankfully I’ve got the side dish covered already. And I know this will be a hit because who doesn’t love potatoes + cheese?!
Want to know what the best part about holiday cooking is for me? Well for me it’s not having to cook EVERYTHING the day of the holiday. That’s why I’m always looking to create recipes like this cheesy mashed potato casserole dish.
They can be made a day ahead of time and cooked right before serving.
Even if you’re not hosting, this recipe is a perfect go-to side dish that will be a crowd-pleaser.
Dietitian’s Dish
As a dietitian you know I love to promote healthy foods and this definitely includes potatoes!
Potatoes are often looked poorly upon since they are sometimes fried, however, they can be quite the nutritious vegetable when served the proper way.
One medium-sized potato contains only 110 calories and includes tons of important nutrients like Potassium, Vitamin C and Vitamin B6. All are important nutrients that help your body to function properly.

Cheesy Mashed Potato Casserole
Ingredients
- 4 pounds Russet potatoes, chopped
- 1/4 cup butter
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 3/4 cup light sour cream
- 3/4 cup skim milk
- 1/2 cup whole wheat Panko crumbs
- 1 cup sharp cheddar cheese, shredded divided
- 1 cup mozzarella cheese, shredded divided
- 1/2 cup Parmesan cheese divided
- 4 green onions, chopped
- black pepper and salt to taste
Instructions
- Preheat oven to 400ºF. Spray a 13 x 9 in pan with non-stick cooking spray.
- Boil potatoes, about 20 minutes or until soft.
- Drain potatoes and mash.
- Combine mashed potatoes with sour cream, milk, garlic powder, onion powder, salt and black pepper.
- Stir in 1/2 cup cheddar cheese, 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese.
- Add to a casserole dish, top with Panko crumbs, remaining cheese and green onions.
- Cover with aluminum foil and bake for 20 minutes or until potatoes are warmed thoroughly.
