Cheesy Vegetable Casserole

This Cheesy Vegetable Casserole is a fun spin on your traditional green bean casserole with extra vegetables but the same cheesy flavor that’s sure to be a holiday crowd pleaser!

Every year, my mom makes a fantastic green bean casserole or broccoli casserole along with all the delicious fixings.

This tradition, along with many other holiday traditions began with my grandparents’ generation. And I plan to continue to carry them out with my family.

So many memories are made surrounding food, or involving food, why wouldn’t you want to make it taste amazing?

Except for maybe Elf on the Shelf. I’m pretty sure my grandparents did not have an Elf, nor does it involve food.

But it sure is fun to have the kids try to find him in the morning. And it sort of “monitors” their behavior. That’s if his caretakers remember to move him!

Of course, the holidays only come around once a year. So it’s fine to an extent to eat indulgent side dishes, main dishes and desserts.

But isn’t it nice to have a recipe that’s not only a bit healthier for you, but tastes just as great?!

Well, I made this Cheesy Vegetable Casserole with health in mind. And I added a little variety to your typical green bean or broccoli casserole by adding four different kinds of vegetables.

Dietitian’s Dish

For individuals with lactose intolerance, consuming dairy products can be a challenge.

However, there is lactose-free milk available and cheese such as Cheddar, Colby, Monterey Jack, Mozzarella and Swiss contain minimal amounts of lactose.

So it is still possible for those who are lactose intolerant to enjoy the benefits of dairy (such as protein and calcium), without the side effects from lactose.

Cheesy Vegetable Casserole

A delicious vegetable packed holiday casserole!

Cook Time 30 minutes
Total Time 50 minutes

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup onions diced
  • 1 teaspoon minced garlic
  • 2 cups fresh kale chopped
  • 1 cup mushrooms sliced
  • 1 10 ounce bag frozen green beans, thawed
  • 2 tablespoons butter
  • 2 tablespoons whole wheat flour
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 cup light sour cream
  • 2 cups 2% sharp shredded cheese
  • 1 cup whole wheat panko crumbs

Instructions
 

  • Preheat oven to 350°F. Spray a 1 1/2 or 2 quart baking casserole with non-stick cooking spray.
  • In a large skillet, heat olive oil and add onions and garlic. Cook until onions are tender (about 5-10 minutes).
  • Add kale and mushrooms to skillet for another 5 minutes or until kale softens.
  • Add thawed green beans, butter and flour and stir until flour dissolves.
  • Add sugar, salt, sour cream and cheese. Stir until well mixed.
  • Place vegetable mixture in casserole dish and sprinkle with panko crumbs.
  • Bake for 25-30 minutes.

Love the "dietitian's dish" fact in this post Kristy! I also love the crunchy topping. My family isn't a fan of green bean casserole so I'm going to give this one a try :)
