I typically help my kids make their lunches, with an emphasis on “help” which means I am only assisting.
With that said, since I started working outside the home this year, I was forgetting to make my own lunch.
So I would end up just throwing some snacks together like hummus and vegetables/pretzels and a yogurt.
Of course, this is better than eating carry out, but I wanted something more satisfying. So, this leads to a little bit of food prep on the weekend. Now my lunches (and my husband’s) could be simply put together in the am.
That’s where this simple Chipotle Cheddar Chopped Salad comes in handy. With only four ingredients, it takes very little time to through together, especially with pre-cooked chicken.
After adding all the ingredients to a large bowl, I will divide them up among 4 plastic containers for us to grab and go during the week.
These salads have been lifesavers. Not only do we save money, but we are also getting plenty of protein and vegetables mid-day.

Chipotle and Cheddar Chopped Salad with Chicken
Ingredients
- 1 bag DOLE® Chipotle & Cheddar chopped salad kit
- 6 ounces cooked cubed chicken breast
- 1 cup cup low-sodium black beans drained, rinsed
- 1/2 avocado diced
Instructions
- Mix salad kit contents in large bowl. Divide into two bowls and top with chicken, black beans and avocado.
