It doesn’t get much better than this sweet and decadent Chocolate Zucchini Cake with a chocolate chip crumb topping!

This recipe is adapted from my mom’s neighbor. My mom just happened to try her neighbor’s chocolate zucchini cake last week when I was brainstorming ideas for #Choctoberfest. When my mom suggested I try the recipe, I thought…perfect timing!
Not only did I have a ton of zucchini in my fridge, but the recipe also called for a decent amount of sugar. And of course CHOCOLATE!

As you can see below I received a TON of Imperial Sugar…40 pounds to be exact. It may sound like a ton of sugar, but honestly, I go through quite a bit of sugar. baking my favorite Betty Crocker Chocolate Chip Cookies AND holiday favorites. Thanks to Imperial Sugar for helping to fulfill my sweet tooth!
The original recipe suggested it be put in a 9 x 13-inch baking pan, but I decided to use loaf pans. And this recipe easily filled up two 9-inch loaf pans. I wanted to take a picture of the cake sliced but it was so moist and I obviously did not spray the pans generously enough with non-stick cooking spray.
Since when I tried flipping the loaf upside down, it crumbled to pieces. This led to half the cake sticking to the bottom half of the pan. Oops! Regardless, it is an extremely moist and decadent chocolate cake.
And don’t be fooled by the zucchini in the recipe, you definitely will not taste it!
Chocolate Zucchini Cake
Ingredients
- 1 1/2 cup butter, softened
- 1/3 cup unsweetened applesauce
- 2 tablespoons canola oil
- 1 3/4 cups Imperial Sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup skim milk
- 1 1/2 teaspoons white vinegar
- 2 1/2 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups finely grated zucchini
Instructions
- Preheat oven to 350°F and coat two loaf pans with non-stick cooking spray.
- Mix the butter, oil, applesauce and sugar. Add the eggs and vanilla.
- Combine the milk and vinegar.
- In another bowl stir together the flour, cocoa, baking soda, baking powder and salt.
- Slowly add the milk mix and dry ingredients, alternatively to the sugar mixture. Mix well.
- Stir in zucchini by hand and pour into two loaf pans.
- Combine chocolate chips, walnuts and brown sugar and sprinkle over both mixtures.
- Bake for 40-45 minutes or until toothpick comes out of loaves clean.

I've wanted to make a zucchini bread/cake forever now and still haven't done it. This one looks really great! And isn't zucchini the perfect way to balance all that sugar we received? :)
