This Creamy Parsley Lemon Dressing is a simple, tangy dressing that is perfect to make when you have a plethora of fresh parsley.
We are back at it with a flourishing garden this year and I absolutely love it. We started a mini garden at our house 5 years ago in 2017 and it’s been amazing ever since.
I had always wanted to have a garden, however, our previous house was not conducive to having one as you’ll read in the link above.
We loved gardening so much that in the following year, 2018, we really upped our game. My husband made this garden that year.
And I believe it was one year later that we expanded again to about 6 times the size!
It’s such a fantastic learning experience for the kids (and myself included). This year we are growing:
- Parsley
- Basil
- Mint
- Tomatoes – Big Boy variety and cherry
- Zucchini
- Cucumber
- Romaine lettuce
- Mixed lettuce
I created this Creamy Parsley Lemon Dressing recipe specifically because our parsley was growing like crazy. Below is just about the amount I harvested to make this recipe.
Besides rinsing and mincing the parsley, this dressing is super quick to make.

Creamy Parsley Lemon Dressing
Ingredients
- 6 tablespoons light sour cream
- 5 tablespoons olive oil
- 1/2 cup fresh parsley, minced
- 1/4 teaspoon dry mustard
- 3 tablespoons lemon juice (about 1 lemon)
- 2 teaspoons minced garlic
- salt and pepper to taste
- 1/2 teaspoon lemon zest optional
Instructions
- In a small bowl whisk dressing ingredients together well.
- Serve with your favorite salad.
Notes
Once you put in the refrigerator, this dressing will thicken, which I prefer, but if you’d rather it be thinner, you can add a bit or water or olive oil to it immediately before serving.
