This easy breakfast casserole is packed full of high-quality protein to help keep you satisfied for a fantastic start to the day.
I’ve made a few breakfast casseroles over the past year such as my Ham and Vegetable Breakfast Casserole and Crustless Spring Vegetable Quiche.
But the one I bring you today is by far the simplest.
You can easily prep it in about 10 minutes. It’s perfect for Christmas morning or anytime.
And the best part is you likely already have the ingredients at home.
This holiday season has reached a whole new level of excitement and busyness for our family with our kids between the ages of 2 and 5.

Even though I’m still holding my breath and amazed that he hasn’t knocked the tree down yet.
And among all the excitement, sickness has arrived for all three of them! All with colds and both boys with double ear infections – ugh!
At least they are troopers as you can see below!
I also try to remind myself that even though it’s miserable for all of us when the kids are sick, colds and ear infections are nothing compared to serious illnesses that many families manage on a daily basis.
I am so thankful for overall healthy children!
Dietitian’s Dish
I use the term “high-quality” protein quite a bit so I thought I’d explain what that means exactly.
High-quality protein, or complete protein, is a type of protein that contains all the essential amino acids that our body needs (and does not make on its own).
High-quality protein includes:
- beef
- poultry
- fish
- eggs
- dairy products
- some plant-based foods like soy and quinoa
This casserole has 6 servings with 17 grams of protein (mostly complete proteins).
And if you add a glass of milk it’s a total of 25 grams of protein just for one meal.
This kind of meal is a fantastic start to the day that not only will help with satiety, but consistent amounts of protein throughout the day can help you maintain a healthy weight.

Easy Breakfast Casserole
Ingredients
- 3 cups frozen Potatoes O’ Brien
- 1 cup 2% shredded sharp cheese
- 7 1/2 ounces smoked turkey sausage cut into small pieces
- 6 large eggs
- 2 tablespoons skim milk
- 2 tablespoons Dijon mustard
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 350°F. Spray a small glass baking pan with non-stick cooking spray.
- Place the frozen potatoes, followed by the turkey sausage and cheese into the pan.
- In a small bowl whisk together the eggs, milk, Dijon mustard, Italian seasoning, garlic powder and salt and pepper.
- Bake uncovered for 40 minutes.
