Easy Spinach Quiche (Spinach Florentine)

This Spinach Quiche is made with simple yet delicious ingredients that you likely have on-hand and takes only about 10 minutes to prep!

Today’s recipe was created when I had quite a bit of spinach leftover and wanted a higher protein meal. My entire family regularly enjoys eggs for breakfast or lunch so I love to look for new ways to enjoy them.

I’ve made this numerous times over the past year since I typically keep refrigerated pie crust in my fridge, and always have fresh spinach and eggs.

And the best part is at least four out of five family members love it! I now make this recipe about once a week!

Simple Ingredients Needed for This Easy Spinach Quiche

  • refrigerated pie crust
  • eggs
  • milk 
  • mayonnaise 
  • fresh spinach leaves or your favorite veggies (steamed or roasted)
  • salt and black pepper
  • garlic powder
  • Colby Jack shredded cheese

When researching this recipe I discovered it’s also called Spinach Florentine, originating in France. This is something I would have loved to know before visiting France since I would have definitely tried it there!

Typically I purchase a large bag of spinach from Sam’s Club every time I make a trip there. And how do I choose which spinach to buy? I look for the one with the farthest expiration date or use by date.

Spinach is full of nutrients such as insoluble fiber, vitamin A, vitamin C, vitamin K and folic acid.

Easy Spinach Quiche

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes
Servings 6 slices

Ingredients
  

  • 1 refrigerated pie crust, unbaked
  • 8 large eggs
  • 2/3 cup milk (I use skim)
  • 1/2 cup mayonnaise (I use light)
  • 4 cups fresh spinach leaves
  • salt and black pepper to taste
  • 1 teaspoon garlic powder
  • 1 cup colby jack shredded cheese

Instructions
 

  • Preheat the oven to 400F.
  • In a large bowl, combine the eggs, milk, mayonnaise and seasonings. Whisk until thoroughly combined.
  • Stir in the spinach and cheese.
  • Add the mixture to the pie crust and cover it with aluminum foil.
  • Bake for about 55 minutes then remove the foil and bake for an additional 10 minutes or until eggs are cooked thoroughly.

Notes

If you use light mayonnaise, it won’t stay mixed when you add it to the eggs. So once you mixed all the ingredients, place it in the oven to bake immediately.
