This Farmers Market Roasted Vegetable Flatbread Pizza is a simple way to eat a nutritious meal while enjoying the delicious plentiful in-season veggies!
I can’t believe summer is almost over.
My kids start school in about 3 weeks but I know other parts of the country and even some districts in Michigan have already started school!
Well, we’re planning to thoroughly enjoy the last few weeks of summer, including the fresh veggies you can get from your local farmers market.
Since we don’t have our own garden, I love getting extra vegetables from my family and friends when they have an abundance of vegetables that they can’t eat fast enough.
So this month you’ll definitely be seeing plenty of fresh vegetables appearing in many of my recipes.
Like I’ve said before, I love adding veggies to the main dish. Not only does it save time from having to make an extra side dish, but it also helps my family to eat more veggies!
Dietitian’s Dish
Since my family (myself included) LOVE pizza, I love serving it in a variety of ways, especially healthier versions.
Using Flatout Flatbread not only adds fiber to the meal but also protein.
And obviously it’s quite a bit fewer calories than carryout pizza. And you can add as many veggies as you like!
With these pizzas I also allowed the kids to add whatever veggies they wanted and of course they loved having the autonomy to choose.
Look for Flatout® Flatbread in the deli section of your local grocery store or produce store (that’s where I find mine) or check out their Flatout Finder to locate them at a store nearest you.
Farmers Market Roasted Vegetable Flatbread Pizza
Ingredients
- 2 Flatout® Flatbreads I used ProteinUp™CarbDown® flatbread
- 1 zucchini sliced
- 3/4 cup corn equal to 1 corn on the cob
- 1 tomato sliced
- 1/2 red onion sliced
- 1 orange pepper sliced
- 1/2 cup mushrooms chopped
- 1/4 cup basil pesto sauce divided
- black pepper
Instructions
- Preheat oven to 400°F. Coat a rimmed baking pan with aluminum foil sprayed with olive oil (I use the Misto sprayer).
- Place vegetables in a single layer on the pan. Sprinkle with black pepper and spray with olive oil.
- Roast for 20-25 minutes.
- Coat each flatbread with 2 tablespoons of basil pesto sauce.
- Add roasted vegetables on top of pesto sauce.
- (Optional) Broil pizza for 3-5 minutes for a crispier flatbread.
- Serve immediately.
