Lunch doesn’t have to be complicated especially if you prep ahead of time like with this Greek Quinoa Salad that you can make once and enjoy all week long!
Stuck in a lunch rut? Personally, I get bored quite easily when it comes to lunch and dinner.
Thankfully I’m a food blogger and am pretty much required to come up with different recipes weekly.
This month’s Recipe Redux theme was to create a kid or adult-approved lunch to keep things interesting.
I enjoy coming up with kid-friendly meals (which are typically simply because that’s what my kids typically like such as these Peanut Butter Banana Roll Ups or my tips in this 5 Simple Lunch Packing Tips post.
However, I was in the mood to create something for ME this time.
I do not like to take the time to make myself lunch daily.
And since I’m home most of the time for lunch with my two youngest kids, that’s a bit of a problem.
I will often munch on the food I’m making them, or eat their leftovers.
That’s why I try to make recipes like this Greek Quinoa Salad because I can eat it for several days in a row and not have to worry about making lunch for myself every day.
Dietitian’s Dish
This dish is as colorful as it is nutritious! Too bad the colors don’t leer my kids into trying it!
Oh well, someday they will. Personally, I love trying new combinations of grains like quinoa which is one of my favorite ancient grains.
Full of fiber and it’s a complete protein!
And I’m not worried about my kids wanting to try this quinoa salad because they LOVE practically every vegetable in this salad, they just don’t like them all mixed together.
You can’t win them all, can you!?

Strawberry Quinoa Spinach Salad
Quinoa Salad with Dried Cranberries
Creamy Parsley Lemon Dressing
Ingredients
- 6 tablespoons light sour cream
- 5 tablespoons olive oil
- 1/2 cup fresh parsley, minced
- 1/4 teaspoon dry mustard
- 3 tablespoons lemon juice (about 1 lemon)
- 2 teaspoons minced garlic
- salt and pepper to taste
- 1/2 teaspoon lemon zest optional
Instructions
- In a small bowl whisk dressing ingredients together well.
- Serve with your favorite salad.
Notes
Once you put in the refrigerator, this dressing will thicken, which I prefer, but if you’d rather it be thinner, you can add a bit or water or olive oil to it immediately before serving.
