You’ll love this simple Greek Yogurt Broccoli Salad with Sunflower Seeds that it will quickly become a new favorite summer side dish to pair with just about any meal!
When summertime comes around I’m roasting far fewer veggies than I do the rest of the year and rely heavily on raw vegetables. I typically buy an assortment of bell peppers, along with baby carrots and cherry tomatoes and serve them with hummus.
This is the simplest way to serve vegetables, in my opinion, and no hot oven required!
However, it does get old eating the same veggies day after day which is why I like to change it up a bit and add in salads like this greek yogurt broccoli salad.
I recently discovered dried cranberries that have different flavors added. For this recipe I added dried cranberries with a cherry flavor and they are so delicious.
I also have experimented with Greek yogurt quite a bit in salads and this one tastes by far the best.
A few of my other favorite non-lettuce salads include:
Mexican Corn & Black Bean Salad
Healthy Greek Yogurt Egg Salad
Lebanese Salad with Tomatoes and Cucumbers
I am also loving the time-saver salad kits that I recently have found at Sam’s Club, Meijer and Kroger.
They typically include a variety of greens (kale, cabbage, spinach), nuts, cheese and a delicious dressing. I will open one bag up and add several handfuls of baby spinach to make the salad last longer.
I love making this at the beginning of the week and then enjoy it for several days.
What are some of your favorite ways to enjoy vegetables on hot summer days?
