So far this summer has been a whirlwind of fun, fun and fun! Seriously we are in love with our neighborhood. This past weekend topped it so far with our neighborhood mini triathlon! My entire family competed in the triathlon and I couldn’t have been prouder. As you might remember me talking about triathlon a bit here and there, it has been several years since Dan and I have completed a triathlon (4 years for me and 5 years for Dan). I guess that’s what happens when you start having children and have 3 in a little over 3 years.
Anyways, this triathlon was a fantastic way to dabble in triathlon again without spending a ton of time training. With that said, Dan and I had so much fun doing this one, we are planning our own sprint triathlon later in the summer. For those of you wondering, a sprint triathlon consists of between 400-800 meters swimming, 12.5 miles biking and 3.1 miles running. Our neighborhood mini triathlon was a 400 meter swim, 5.5 mile bike and 1.8 mile run.
Thankfully we were lucky to have fantastic weather all weekend long for the triathlon and just spending time outside. And with great weather comes more grilling! I made these delicious kabobs over the weekend and we all enjoyed them. They are made with a simple homemade Hawaiian flavored marinade which definitely adds a delicious flavor to the beef. And I served it with one of my favorite side dishes, this Mexican Corn and Black Bean Salad.
