Summer vacation for my kids has officially begun this week and they couldn’t be more excited. It means more and more lake time and swimming which the kids absolutely love. Thankfully we were also given lake toys like a canoe, paddle boat and two kayaks to enjoy. This summer is the first time any of us have kayaked and I I can’t believe how quickly my kids picked it up!
Did you know even three year olds can kayak!? Me neither until my three year old hopped on our kayak and grabbed the paddle and off he went! Of course he wasn’t in any danger since Dan was in the water too but it was quite the sight to see since the paddle is about three times the length of his body and weighs quite a bit. This is no surprise since E is the youngest and he wasn’t going to be left out and be the only kid not kayaking.
So with all this outdoor living I am grilling like crazy these days. And with summer officially starting tomorrow I am thrilled to say I’ve already grilled quite a bit this year. This time I decided to make an appetizer that would be perfect for 4th of July parties or just about any barbecue.
I decided to use just four ingredients to make these red potato skins that are so simple yet still delicious. And you know they are good when your husband’s response when I asked him if he liked them was “restaurant-style good.” I used a grill rack pictured above and also added a few directly on the grill. Placing them directly on the grill cooked them a little faster but you always have the issue of having a few casualties fall between the grill rack.
Dietitian’s Dish
Potatoes are one of the most versatile vegetables around. They can be eating cold or hot and can be grilled, roasted, baked and even put in the slow cooker. And even though potatoes often get a bad rap they shouldn’t. A medium potato has only about 110 calories, 3 gram of fiber (mainly found in the skin) and also contains several vitamins and minerals.
Grilled Red Potato Skins
Ingredients
- 5 red potatoes washed and cut into 1/4 inch slices
- 1/2-3/4 cup shredded Colby Jack cheese
- 1/2 cup bacon bits
- 2 green onions chopped
- olive oil
Instructions
- Microwave potatoes with about 2 tablespoons of water for about 10 minutes until slightly tender.
- Spray or brush on olive oil on top of each potato slice.
- Place potato slices directly on the grill or on a grill pan over medium heat.
- Grill for about 10-15 minutes or until potatoes are tender. Sprinkle with cheese and grill for about 5 more minutes or until cheese is melted.
- Remove from grill and top with bacon bits and green onions.
