My grandmother made THE BEST banana bread.
While growing up she would make a loaf and bring it over to our house. Not even two days later and it would be gone!
Of course, the taste was out of this world, but it also included lots of sugar and shortening.
So, since I still crave that banana bread recipe I thought I’d revamp it to make it a bit healthier, yet still keep the delicious taste.
Ingredients Needed For These Healthy Banana Nut Bread Mini Muffins
- canola oil
- applesauce
- white granulated sugar
- eggs
- ripe bananas
- all-purpose flour
- whole wheat flour
- baking powder
- baking soda
- salt
- walnuts
With the added nutrition of whole wheat flour and walnuts, what more could you ask for?
Ok, maybe you could ask for more, but we’re just talking muffins here.

Yes, they still have some sugar and all-purpose flour in them. I still enjoy a similar taste to my grandmother’s traditional banana bread, just with a few added nutrients.
I re-shoot these muffins with my slightly better photography skills (in 2018). But I left in an old image below, which thankfully does show some improvement!
My grandmother would make them in a traditional loaf pan.
But for little kiddos to enjoy and not make a complete mess, I like to bake mine in a mini muffin pan.
Not only are they the perfect serving size, but they are also easy to freeze. That’s if you by chance have any left over!
Nutritional Tidbits
Walnuts are popular tree nuts that are packed full of antioxidants.
Walnuts contain mostly healthy fats (monounsaturated and polyunsaturated) and have been shown to reduce the risk of heart disease.
They can be an excellent part of a balanced diet, just make sure to eat them in moderation since they are calorie-dense.
How to add these muffins into your day
- Pair them with a banana and a cup of coffee for a satisfying breakfast combo.
- Serve them with a glass of milk or yogurt for your child’s snack time.
- Bring them along on a road trip this summer.
- Eat them alongside a Chicken Salad for lunch or dinner.
I personally love muffins as part of my breakfast or as an afternoon snack.
My kids LOVE these muffins and act as though they are candy when I make them. No joke, it’s quite amusing!
(We’ve come a long way since this post, I WISH my kids still thought these muffins were candy! HA!) But at least they still love them.
Healthy Banana Nut Bread Mini Muffins
Ingredients
- ¼ cup canola oil
- 1/3 cup applesauce unsweetened
- 1/3 cup granulated sugar
- 2 eggs
- 3 ripe bananas
- 1 ¼ cup all-purpose flour
- ½ cup whole wheat flour
- ¼ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup chopped walnuts
Instructions
- Combine canola oil, applesauce, sugar and eggs. Beat until well combined.
- Mash bananas and add to mixture.
- Combine flour, baking powder, baking soda and salt and add to mixture while stirring.
- Add walnuts just until combined.
- Bake at 350 degrees for about 15-17 minutes.

Any (which was most) desserts my grandmother made contained shortening and lots of sugar...but so so good! Although it is a kind of exciting to try and revamp them to be a bit healthier, yet still delicious :)

Isn't fun to revisit (and revamp) family favorites? I recently did the same with mom's famous banana bread, which was heeaavvvy on the butter and sugar (and the reason it's so decadent), and was very pleased with the result. Glad you were able to do the same with your grandma's version. Love your tips about adding them to a day's meal plan!
