I’m back again with a Mexican-themed dish that is so easy I’m already adding it to my regular meal rotation. It still seems amusing that I post a decent amount of Mexican flavored dishes since if you asked me a few years ago I would have said I don’t even like Mexican food. Well things have changed, and thankfully I have found several ways to incorporate Mexican flavors into a variety of dishes at home, some with a little spice (for my sake and the kids), and some with a little kick (for the husband).
Bowl-type recipes have been quite popular in the last few years at carryout Mexican restaurants and in the Pinterest world, and for good reason! They are packed full of veggies and protein all in one bowl, and are so versatile. This time I added a simple avocado lime dressing which really hit the spot.
Dietitian’s Dish
Last month was American Heart Month, however, we should be focused on heart health all year round. An easy way to incorporate heart healthy foods is to cook more meals at home. This way you can choose the exact ingredients you’d like such as low sodium, lean meats like lean or extra lean ground beef and extra vegetables. Ingredients
- 1 pound lean ground beef
- 1 tablespoon taco seasoning, no sodium
- 1 (15 ounce) can low-sodium black beans, drained and rinsed
- 1 cup frozen corn, thawed
- 1 tomato, sliced
- 1 bell pepper (yellow, red or green), sliced
- 2 cups romaine lettuce, shredded
- 1 avocado, peeled and chopped
- 1 avocado
- 1 tablespoon lime juice
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- salt and black pepper to taste
- Optional toppings: light sour cream, fresh cilantro
Instructions
- Add ground beef and taco seasoning to medium skillet. Cook over medium heat until thoroughly cooked.
- Combine remaining ingredients in a large bowl.
- To make dressing: combine all ingredients and blend with an immersion blender.
