This healthy broccoli potato cheese soup is a delicious hearty meal with extra veggies. It’s also lactose intolerant friendly!
In our house, we love all things cheesy, especially when mixed with delicious nutritious ingredients.
Okay, maybe the kids love cheese on anything. however, I enjoy adding it to vegetables as well. Growing up I believe the only way I ate broccoli was with a ton of melted cheese over the top of it.
Obviously, my mom had a good plan because I ate it then and now I love vegetables of all kinds (especially with cheese) today.
Today’s recipe uses lactose-free milk in honor of February being Lactose Intolerance Month.
You may not know that you can still enjoy many dairy products with lactose intolerance.
These foods include: yogurt and hard and aged cheeses like cheddar, Colby, Monterey Jack, Parmesan and Swiss.
These dairy foods have less lactose compared to other dairy products like milk.
However, people with lactose intolerance have different degrees of the condition and some can even enjoy milk in small amounts.
If not, lactose-free milk is an excellent option which is real cow’s milk just with the lactose removed.
This broccoli potato cheese soup started out as just a broccoli cheese soup but you know how I like to add vegetables to just about anything. And soups are probably the easiest to add them to.
So I added red skin potatoes and cauliflower in addition to the broccoli and it turned out great!
Dietitian’s Dish
For people with lactose intolerance, their bodies do not produce enough of the digestive enzyme lactase which helps break down the lactose found in milk products.
If milk products are consumed this can lead to unwanted side effects like nausea, cramping and bloating.
So to counteract this, the enzyme lactase, is added during the processing of regular milk to create lactose-free milk.
Lactose-free milk also comes in a variety of options including fat-free, 1%, 2% and whole milk.
Healthy Broccoli Potato Cheese Soup
Ingredients
- 1 tablespoon olive oil
- 1 large onion chopped
- 1 teaspoon minced garlic
- 1/2 cup white whole wheat flour
- 4 cups low sodium chicken broth
- 3 cups fat-free lactose free milk
- 6 about 1 1/2 cups red skin potatoes, chopped
- 2 cups frozen broccoli thawed
- 1 cup frozen cauliflower, thawed
- 1 tablespoon Worcestershire sauce
- salt and pepper
- 1 1/2 cups 2% sharp cheddar cheese shredded
Instructions
- Heat olive oil in a large stock pot or dutch oven.
- Add garlic and onions and cook until onions are tender.
- Slowly add flour and chicken broth and stir until blended. Heat until slightly thickened.
- Stir in milk, potatoes, broccoli, cauliflower, Worcestershire sauce, salt and pepper. Simmer for about 15 minutes or until vegetables are tender then stir in cheddar cheese until melted.
