This Healthy Creamy Avocado Lime Pasta Salad includes loads of veggies to bring you a nutritious, dietitian-approved southwest-style pasta salad. It’s perfect for parties and barbecues this summer!

If you haven’t noticed I’ve been on an avocado and Greek yogurt kick. And it seems to not be slowing down anytime soon.
So I had to find a way to combine my two newest trendy ingredients into a delicious pasta salad. And I’m thrilled to say it tastes great!
The dressing on this salad is so simple with just plain Greek yogurt and ranch dip combined to bring tons of flavor.
And the salad is versatile enough that you can add whatever vegetables you prefer.
For pasta salads, I will typically just throw in whatever vegetables I have on hand that needs to be eaten before they spoil.

Dietitian’s Dish
From a baby’s first food to a gourmet meal for adults, avocados are definitely a versatile fruit. They are also great since you can serve them with breakfast, lunch or dinner.
And rightfully so since they are a powerhouse full of nutrition.
One-fifth of an avocado contains about 50 calories, 20 vitamins and minerals and even healthy fats.
Creamy Avocado Lime Pasta Salad
Ingredients
- 12 oz. package brown rice rotini noodles
- juice from 2 limes about 2 tablespoons lime juice
- 2 teaspoons minced garlic
- salt and pepper
- 1 avocado peeled and chopped
- 1/2 cup black beans drained and rinsed
- 1/2 medium cucumber
- 1 cup tomatoes chopped
- 2 green onions chopped
- 1/4 cup fresh cilantro chopped
- 1/2 cup Mexican-blend cheese shredded
- 1 package ranch dip
- 2 cups plain Greek yogurt
Instructions
- Cook pasta according to directions. Rinse with cold water.
- Add vegetables, beans and cilantro to the pasta. Stir until combine.
- Toss in cheese.
- Combine the ranch dip with the Greek yogurt and stir well. Add 1-2 cups of the ranch dressing to pasta salad.
- Refrigerate for at least one hour before serving.
