Healthy Greek Potato Salad {with Greek yogurt}

This Healthy Greek Potato Salad {with Greek yogurt} is definitely a summer classic with a Greek twist. It also includes black olives and feta cheese for a unique and flavorful side dish!

We have one week left of summer vacation which is a bit crazy to believe. This summer has flown by.

I’m sure it has something to do with moving to our new house and “vacationing” in our backyard with tons of different friends for my kids to play with any day of the week.

We have enjoyed the company of so many new friends from our neighborhood, including old friends who just love to spend time around a lake.

This potato salad is inspired by backyard barbecues and just enjoying summer to it’s fullest.

We didn’t plan to get away this summer for an overnight trip since we love spending time at the lake. However, my wanderlust got the best of me. And gave me the crazy idea of heading to the Upper Peninsula (U.P.) of Michigan over Labor Day weekend.

Yes, we are one of the crazies who will be driving up north where the traffic will be horrific. This is especially true on the way home. But I’m sure it will be worth it since we’ll have one last hurrah to spend together before the hectic school schedule begins for all three of our kids. 

We plan to camp near a ton of waterfalls in the U.P. And plan to hike, possibly see the Pictured Rocks and just relax as a family.

Since we won’t be having our traditional barbecue with family over Labor Day weekend, I made it a week early to enjoy over this weekend. Although we never need a holiday for an excuse to have barbecues and outdoor parties. We’ve been doing that all summer long!

Dietitian’s Dish

As you may notice I love adding Greek yogurt to dishes that call for mayo or sour cream. It’s an easy substitute and you add such a nutritional boost of protein and calcium. Feel free to vary the ratio of yogurt to mayo in this recipe.

Healthy Greek Yogurt Potato Salad

Prep Time 4 hours 10 minutes
Total Time 4 hours 10 minutes

Ingredients
  

  • 2 pounds Red Skin Potatoes quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 4 ounce can sliced black olives, drained
  • 1/4 cup feta cheese
  • 2 stalks celery chopped
  • 2 tablespoons red onions finely chopped
  • 1 tablespoon Dijon mustard
  • 2 teaspoons apple cider vinegar
  • 3/4 cup non-fat Greek yogurt
  • 1/4 cup low fat mayonnaise
  • 1/4 cup fresh parsley chopped
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • salt and black pepper

Instructions
 

  • Preheat oven to 400°F.
  • Add potatoes to a microwave safe dish with about 2 tablespoons of water. Heat in microwave for about 10 minutes on high.
  • Place potatoes on a large aluminum foil lined rimmed baking pan. Drizzle with olive oil and garlic powder.
  • Roast for about 30 minutes or until golden brown and tender.
  • Combine remaining ingredients and stir in cooled potatoes.
  • Refrigerate at least 4 hours before serving.
