This weekly meal plan (week seven) is full of simple no-recipe meals along with a few slow cooker meals that are sure to please the entire family!
I served this meal plan a few weeks before Christmas. It was quite the busy few weeks as you can likely tell by the simple meals. However, it’s not much different than I normally serve since I’m all about simple meals. This week’s meal plan includes beef, chicken and tuna meals.
Monday (10 minutes prep, 2 hours in slow cooker)
This meal does not go together whatsoever, but when you are a food blogger and need to make certain recipes like these meatball appetizers, you serve them to your family for dinner so they don’t go to waste!
- Slow Cooker Sweet & Sour meatballs (meatballs, apricot preserves, BBQ sauce)
- Mashed potatoes
- Roasted Asian vegetables
Tuesday (25 minutes)
- Chicken Fettuccine Alfredo:
- cook whole wheat noodles; in a large pan add cooked chicken breast or thighs and light Fettuccine Alfredo sauce, stir in cooked noodles
- Leftover Asian vegetables from last night
- I also made this Black Bean Soup from Cookie and Kate to add to dinners this week and for Dan and I to have for lunches
Wednesday (15 minutes prep, 4 hours in slow cooker)
- Slow cooker Salsa Chicken (includes chicken breast, peppers and onions, served with whole wheat tortillas, cheese and light sour cream)
- Also served tortilla chips with it which makes it more likely for the kids to eat it
Thursday (55 minutes)
- Tuna Noodle Casserole
- Raw vegetables
Friday (10 minutes)
- Pizza carry out night!
- Served with raw vegetables and hummus
Saturday (Night Out)
- Went out to a restaurant which is a rarity for our family!
Breakfast this week
- Homemade granola with Greek yogurt or skim milk: I double this batch and it lasts about a week
- Peanut Butter and Honey Oatmeal
- Cereal: Quaker Squares, Honey Nut Cheerios with skim milk
Lunch this week
- sliced ham, turkey, salami
- Whole wheat crackers
- yogurt
- cherry tomatoes
- sliced apples, clementines,
