These Leftover Turkey Roll Ups are delicious and a simple way to use extra turkey leftover from Thanksgiving!

I hosted Thanksgiving again this year and cooked the turkey, stuffing (Rachel’s slow cooker recipe), mashed potatoes and this Ambrosia Salad.
We had a blast, especially now that our kids are getting a little older. I can’t wait for the Christmas festivities to begin!
Unfortunately since Thanksgiving half of our house is sick. JP has his first ear infection (and possibly whooping cough!), baby E is still nursing a double ear infection that antibiotics don’t seem to be helping. AND I just caught a cold from them.
And yes I did say whooping cough. A preventable illness due to these great inventions called vaccines!
Yes, I vaccinate all of my children, but when more than 5% of the population chooses NOT to vaccinate, it decreases the effectiveness of the vaccines that my children have received.
Thankfully in the scheme of things, this is small potatoes. However, it still infuriates me! I’m so thankful for the overall health of our family and friends and the chance to spend another Thanksgiving together.

Leftover turkey should be eaten within four days of Thanksgiving. So make these roll ups ASAP or you’ll need to throw out your leftovers to be safe.
If you froze any leftovers they are safe for an indefinite amount of time, but should be eaten within three or four months for the best flavor.

Leftover Turkey Roll Ups
Ingredients
- 3 cups cooked turkey cut into small pieces
- 4 ounces cream cheese softened
- 1 teaspoon onion powder
- 1/4 cup parsley chopped
- 1 tablespoon fresh thyme
- salt and pepper to taste
- 1 package of crescent rolls
- turkey gravy
Instructions
- Preheat oven to 350°F.
- In a large bowl combine all ingredients and stir until turkey is well coated with cream cheese.
- Roll out crescent rolls on a baking sheet and add about a 1/3 cup of filling to the wider side of each crescent roll.
- Roll up each crescent roll and place them on a baking sheet.
- Bake for 9-12 minutes or until crescent rolls are light brown.
- Top each roll up with warm turkey gravy if desired.

These look delicious Kristy!!! My Mom actually saved me some leftover turkey from their Thanksgiving so I have a lot in the freezer ready to use up. Since I could eat crescent rolls by the pound, I'll definitely be making these!
