Simple Ingredients Needed to Make These Mashed Sweet Potatoes
- sweet potatoes
- maple syrup
- light butter
- non-fat plain yogurt
- cinnamon
- nutmeg
I personally love sweet potatoes whether they are mashed, baked, fried, in a casserole, with or without butter…you get the point.
And so, if you like sweet potatoes but enjoy a bit more sweetness than plain sweet potatoes, this recipe is for you.
It has maple syrup added for extra sweetness and yogurt to add some creaminess to it.
While I love Sweet Potato Casserole, I sometimes want to enjoy sweet potatoes a little healthier. That’s why I came up with this sweet, yet healthier mashed sweet potato recipe.
Dietitian’s Dish
Sweet potatoes are nutrition powerhouse vegetables. They are packed full of vitamin C (help with the immune system), vitamin A (eye health), fiber (regularity and decrease risk of colorectal cancer) and many more nutrients!
They are simple to make too. Just microwave them or bake in the oven for about 1 hour or until soft.
Maple Mashed Sweet Potatoes
Ingredients
- 3 medium sweet potatoes
- 2 tablespoons maple syrup
- 2 tablespoons light butter
- 3 tablespoons non-fat plain yogurt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Instructions
- Preheat oven to 350°F.
- Pierce each sweet potato several times with a knife and place them on a aluminum foil lined rimmed baking sheet.
- Bake until sweet potatoes are very tender when pierced with a fork (about 1 hour).
- Remove from the oven and let cool until able to handle.
- Remove skins from sweet potatoes if desired and add them to a large bowl along with remaining ingredients.
- Using an immersion blender or potato masher, blend all ingredients together until sweet potatoes are completed mashed.
