Maple Pecan Granola

This maple pecan granola is sweet enough as a dessert topping yet still healthy enough for breakfast!

I could eat this granola all day long. So could my kids. I’m not kidding.

I started making this granola in February and have eaten it for breakfast 99% of the time since then. 

I finally came up with a little different recipe this time including maple syrup and pecans, and I love it! It doesn’t stay in clusters as much as my original granola (which I prefer), but it’s just as delicious!

And for me, eating the same healthy breakfast daily helps me start my day on the right foot, and makes it easier for me to eat healthy the rest of the day.

Now my lunch and dinner meals need to change often or I get bored and end up eating more junk than I need. That’s just how my mind works.

This recipe takes an entire 5 minutes to put together and another 25 minutes to bake in the oven.

That’s it!

I always double the recipe which is enough for breakfast for the whole week. that is unless I use it to top ice cream or cheesecake bars (recipe coming tomorrow!). Then it’s obviously gone much sooner.

Dietitian’s Dish

Pecans like all nuts are a good source of protein and fiber. However, they are calorie-dense with just about 1/4 cup being a serving.

This doesn’t mean you shouldn’t enjoy them, just watch the amount you’re eating. Pecans are also rich in antioxidants and monounsaturated fats which help reduce the risk of heart disease.

Maple Pecan Granola

A simple, healthy and sweet breakfast or can be sprinkled over ice cream!

Ingredients
  

  • 3 cups old fashioned oats
  • 1/2 cup ground flaxseed
  • 1/2 cup pecans chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • salt to taste
  • 1/4 cup canola oil
  • 1/4 cup maple syrup

Instructions
 

  • Preheat oven to 300°F. Line a cookie sheet with parchment paper or spray it with non-stick cooking spray (a rimmed baking sheet works best).
  • Combine all dry ingredients in a large bowl.
  • Add maple syrup and canola oil to bowl and stir until oats are well coated.
  • Add granola to pan and cook for 15 minutes, stir, then cook for another 10-15 minutes or until oats are light-brown in color. Don’t overcook!

Ha, I understand Jessica! The first time I attempted to make granola it took 3 fails before it tasted decent :)
