We all know the saying “you only live once” right?? Well this past week we lived up to that exact phrase! My husband and I were out to dinner Friday night around 8 pm and he mentioned a coworker was headed up north to ski for one last weekend.
This just happened to be St. Patrick’s Day weekend, a weekend in Michigan that typically DOES NOT have good skiing conditions, however, we’ve been having unusually cold weather here.
So, what better way to embrace the weather than to head north to ski?!
I’m pretty sure our kids think we are crazy, along with my parents who were watching our kids that night.
We decided to head home from date night at 9 pm, pack as quickly as possible, and drive 4 hours north to Boyne Highlands.
We made it by 2 am and were ready to ski by 9 am the next morning.
So, what was the last thing on my mind when I came home from this packed weekend? Dinner of course.

And in the past, I have mentioned that I had never put a recipe in the slow cooker before work – until now! I had the red onions pre-chopped and even put the rub together the night before.
So before I left for work, I only had to rub the roast and add it to the slow cooker before leaving for work. So simple!

Fresh pork is an excellent protein choice. A three-ounce serving of lean fresh pork contains only 120 calories, yet 22 grams of protein.
Lean fresh pork is also an excellent source of vitamin B6, thiamin, phosphorus and niacin. And a good source of potassium, riboflavin and zinc.
Slow Cooker Mediterranean Pork Roast Quinoa Bowl
Ingredients
- 2-3 pounds Smithfield Boneless Fresh Pork Sirloin Roast
- 1 cup water
- 1 tablespoon olive oil
- 1 1/2 teaspoons coriander
- 1 teaspoon cumin
- 1 teaspoon paprika
- 2 teaspoons minced garlic
- black pepper and salt to taste
- 1 medium red onion chopped
- 1 cup sliced cherry tomatoes
- 1/4 cup roasted red peppers
- 1/2 cup black olives
- 1/2 cup kalamata olives
- 1/4 cup feta cheese crumbled
- 1/4 cup fresh parsley chopped
Instructions
- Add red onions, pork roast and water to slow cooker.
- Rub olive oil and all seasonings on top of roast.
- Cook on low for 8-10 hours or high for 4-6 hours.
- Remove pork roast and slice or shred with two forks. Return pork to slow cooker for about 30 additional minutes.
- Remove pork from slow cooker, draining most of liquid, then combine pork, the remaining vegetables and quinoa together and serve in a bowl.
