No-Bake Almond Cranberry Bites

Today is National Nut Day so it just makes sense that this month’s Recipe Redux challenge was to come up with a favorite healthy recipe containing nuts.

Well, needless to say, I love baking and cooking with nuts just as much as I love using peanut butter in just about any dessert I make. That is when it’s paired with chocolate of course.

When brainstorming more nut recipes, I thought why not create a healthy snack for my kids.

They love variety (most of the time) and let me tell you, these cranberry bites were a winner!

I don’t think they even care what is in the bites, as long as they are bite-size and look fun.

No joke – both my husband and kids guessed that they had chocolate chips in them (no chocolate chips added). So obviously they tasted delicious!

I have tried making energy bites with my food processor and it’s been an epic fail every single time.

We received our food processor for free, which explains why it doesn’t work well, or it could be human error. That is entirely possible.

Regardless, you do not need a food processor to make these, just a bowl and a spoon.

Dietitian’s Dish

Nuts are a fantastic source of healthy fats along with protein and fiber.

Just be aware that nuts are also calorically-dense – a 1/4 cup is a serving and contains between 160 and 200 calories.

Look for unsalted mixed nuts for a variety of nutrients but without all the salt.

No-Bake Almond Cranberry Bites

Energy bites sweetened with dried cranberries and honey.
Servings 38

Ingredients
  

  • 1 1/2 cups old fashioned oats
  • 1/2 cup peanut butter or any nut butter
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 2 tablespoons chia seeds
  • 1/4 cup almonds crushed

Instructions
 

  • Mix peanut butter, honey and oats together until oats are well coated.
  • Stir in vanilla extract, chia seeds and dried cranberries.
  • Place in refrigerator for at least 30 minutes.
  • Form mix into bite-size balls.
  • Roll each ball in crushed almonds.
  • Keep refrigerated in a sealed container.
