No-Bake Chocolate Chip Pumpkin Energy Bites

These No-Bake Chocolate Chip Pumpkin Energy Bites are a fun way to get in some extra fiber and deliciousness this fall. They can easily be enjoyed as a snack or even as part of breakfast.

This season of life is so busy for our family. I’m pretty sure I’ve said that in every “season” in the past decade – since having children.

However, this season, with our kids being the ages of 7, 9 and 11 it is super busy but also so enjoyable.

When I think back to when I had three kids under the age of four, it seems like an eternity ago. But on the other hand, when I sit and think about it, it seems like time has flown by.

And now that we are well into post-pandemic restrictions, we are back in the full swing of extracurricular activities.

Currently, we have two out of our three kids in travel soccer – something I would have bet money on I would NOT have agreed to a few years ago.

But things change, and oftentimes you get what you pay for.

So far, we are having a fantastic experience with the coaches, parents and players.

And soccer is in addition to cross country, band, robotics, scouts and oh yea, school! Thankfully, at the end of this month things will slow down considerably.

With that said, I’m still trying my best to provide a variety of foods to my family including seasonal foods.

My family loves these energy bites that I make regularly (I often replace the Hemp protein powder with ground flaxseed).

No bake chocolate chip energy bites

So I thought why not add some canned pumpkin this fall to energy bites and change them up a bit.

I also used my food processor this time and added dates for some extra fiber. And they turned out great!

Save Time Making Energy Bites or Balls

If you don’t like taking the time to roll them into balls (I don’t either), follow this tip below!

First tip – DON’T make them into balls. The easiest way to still enjoy them is after mixing, line an 8×8-inch baking pan with parchment paper. Use a large enough piece of parchment paper so that it can cover the mixture after placing it in the pan.

Then, spread the mixture evenly into the pan. Cover it with the excess parchment paper and place it in the refrigerator.

Wait at least 30 minutes and then remove. Pull out the mixture with the parchment paper and slice it into bars.

You can choose any size to slice them and it takes a quarter of the time compared to making them into balls.

I feel like pumpkin is one of those vegetables that is often left out. It’s in abundance during the fall time, however, I could easily enjoy canned pumpkin more often throughout the year. I just need to keep it top of mind.

Nutritionally it’s a fantastic addition to bread, muffins and snacks like the no-bake chocolate chip pumpkin energy bites I’m bringing you today.

Pumpkin is high in the antioxidant, beta-carotene and research shows a diet rich in beta-carotene can reduce the risk of certain cancers and heart disease.

No-Bake Chocolate Chip Pumpkin Energy Bites

No-Bake Chocolate Chip Pumpkin Energy Bites

Ingredients
  

  • 1 cup chopped dates
  • 1/4 cup honey
  • 1/4-1/2 cup pumpkin puree
  • 1/4 cup peanut or almond butter
  • 1 tablespoon ground flaxseed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips
  • 1 teaspoon vanilla extract
  • 1 cup old fashioned or quick oats

Instructions
 

  • Combine all the ingredients in a food processor except the chocolate chips. Pulse until smooth.
  • Stir in chocolate chips.
  • Form into balls and store in refrigerator .
