These No-Bake Peanut Butter Corn Flake Cookies are one of the simplest Christmas cookies to make. They take only 2 ingredients and are one of the most delicious too!
If you’re looking for a last-minute Christmas cookie idea then you’ve come to the right place.
These are absolutely delicious (if you like peanut butter) and so simple to make!
This recipe is one of my grandmother’s (Mimi) recipes and I’ve probably made them for at least 15 years in a row.
Ingredients Needed for These Peanut Butter Corn Flake Cookies
- Corn flakes
- Peanut butter chips
- Red and green M&Ms (optional)
And that’s it!
So, my friends and I have carried on our tradition of a cookie exchange for about five years now and this year it almost didn’t happen.
We decided instead of our traditional play date cookie exchange that we would have a moms-only dinner night out and exchange cookies then.
However, mother nature had her own plans. We had a horrible snowstorm with over eight inches of snow that fell the evening of our cookie exchange.
Thankfully our schedules aligned again and we got together last night.
It’s always a blast to get together with this group of friends since we have been friends since our oldest children were born.
And now my youngest baby (who’s already 4 years old!) is loving helping momma out with cookie making.
For our cookie exchange, I asked my friends if they wanted me to branch out and make something different since I always make these Chinese New Year Cookies. But the answer was a definite no.
So I ended up making two dozen of those for the cookie exchange but also added a few of these peanut butter cornflake cookies to the bunch for some variety. They definitely were not disappointed with the addition 🙂

- Sit down while eating and focus on eating slowly.
- Avoid distractions like the TV or your phone.
- Notice the smells and textures of the food you’re enjoying.
- Place your portion on a plate and avoid eating out of a box or bag.
With that said, remember that one meal or one day does not and will not ruin your effort over the past several days/weeks/months.

No Bake Peanut Butter Corn Flake Cookies {Christmas}
Ingredients
- 2 (10-ounce) packages Peanut butter chips
- 6 cups Corn flakes cereal
- Red and green M&Ms optional
Instructions
- In a double boiler or a heavy saucepan, melt peanut butter chips over low heat, stir often.
- Remove melted chips from heat and add corn flakes. Carefully stir to coat.
- Using two spoons, drop tablespoon size cookies onto wax or parchment paper. Top cookies with Christmas M&Ms if desired.
- Chill in refrigerator for about one hour.
