I think they are brilliant, not only because you only need to dirty one pan, but they are typically healthy recipes too!
A win-win in my book.
I have made a few one-pan sausage meals that my family absolutely loves including this Simple Roasted Chicken Sausage with Vegetables recipe.
My entire family loves this meal with no complaints which means I make it quite often of course.
For this one pan meal I decided to make an oven-fried chicken recipe including crushed pecans, Parmesan cheese and Panko crumbs to give it a nice crispy texture.
Dietitian’s Dish
This recipe includes 1 cup of pecans which adds a nice nutritional boost to the chicken.
A 1-ounce serving (about 20 halves) contains about 200 calories but is full of nutrients including mono and polyunsaturated fats, protein and fiber.
Pecans also contain natural antioxidants which may reduce the risk of heart disease as well as help reduce cholesterol levels.
Of course, eating pecans along with a healthy diet with exercise will provide the most health benefit overall.
One Pan Lemon Parmesan Pecan Crusted Chicken with Asparagus
Ingredients
- 2 pounds chicken tenderloins or chicken thighs skinless boneless
- 1/2 cup whole wheat white flour
- 3 tablespoons light butter melted
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 teaspoons minced garlic
- 1 cup whole wheat Panko crumbs
- 1 cup pecans crushed
- 3/4 cup Parmesan cheese divided
- 1/4 cup fresh parsley chopped
- 1 teaspoon lemon pepper
- 1 teaspoon garlic powder
- 1 pound asparagus
Instructions
- Preheat oven to 400°F. Add parchment paper to a rimmed cookie sheet.
- In one bowl add flour.
- In second bowl combine melted butter, lemon juice, lemon zest and minced garlic.
- In a third bowl combine 1/2 cup Panko crumbs, pecans, Parmesan cheese, parsley, lemon pepper and garlic powder.
- Coat each piece of chicken in flour, followed by lemon butter mixture, then Panko Parmesan mixture.
- Place chicken on parchment paper and bake for 10 minutes.
- Flip chicken and sprinkle with remaining Panko Parmesan mixture.
- Add asparagus to sides of chicken, spray with olive oil and sprinkle with remaining 1/4 cup Parmesan cheese.
- Cook for another 10-12 minutes or until chicken is thoroughly cooked.
