I need to start off by saying this pasta is AWESOME!
I’m not kidding, this is a new-to-me pasta (the “pronto” type, not the “Barilla” brand). And it’s so simple to cook with.
Even those who aren’t cooks can easily follow the instructions on the package. And you’ll have a meal in 10 minutes while using only one pan.
Seriously. One Pan. No Boil. No Drain.
All you need to do is combine 3 cups of water with the entire box of pasta.
Then, turn the heat up to high and cook for 10 minutes and voilà! Dinner is served!
I partnered with Barilla to bring you this recipe, however, I can tell you that I have purchased Barilla pasta for quite some time.
And I’ll definitely be buying more of their Pronto pasta.
Thankfully Barilla Pronto Pasta comes in a variety of cuts include half-cut spaghetti, rotini, and penne. I used penne in this recipe.
I have made one-pot pasta dishes before like this One-Pot Kale Pasta, however, with Barilla’s Pronto Pasta, there is no guesswork in how much liquid you need to cook the pasta correctly.
Another highlight I want to mention is a campaign that Barilla pasta is working on.
For every box of Barilla® Pronto™ purchased at Walmart between 7/31/2016 and 10/31/2016, Barilla® will donate 10 meals to kids in need through No Kid Hungry, up to half-a-million meals.* Now that is such an important campaign because with my experience working with low-income children, there are so many children that do not get regular meals and every bit counts!
I also created this specific recipe with a budget in mind.
Tuna is one of the cheapest protein sources you can buy and is also nutritious.
So combining tuna with pasta and pesto sauce brings you not only a delicious meal but also a budget-friendly one!
Dietitian’s Dish
Typically I make only ONE meal for my family. However, I also understand that some families have more difficulties feeding their children so I try to offer simple solutions to still making one meal but also make it more kid-friendly when possible.
For this pasta dish it’s simple.
For a more kid-friendly meal leave out the artichokes and tomatoes and just add them to the pasta once kids are served.
This way everyone still benefits from eating the same meal along with the nutritional benefits from the tuna and pasta. I would also place some leftover artichoke hearts and chopped tomatoes on the table to allow children to add them if desired.
One-Pot Tuna Pesto Pasta
Ingredients
- 1 tablespoon olive oil
- 1 medium onion
- 1 12 ounce package Barilla Pronto Pasta
- 3 cups water
- 1 6.3 ounce jar Barilla Traditional Basil Pesto
- 3 5 ounce cans light tuna fish, drained
- 1 cup canned artichoke hearts chopped (optional)
- Cherry tomatoes optional
- Parmesan cheese optional
Instructions
- In a large skillet heat olive oil over medium heat. Add onions and cook for about 5 minutes.
- Add water and pasta. Turn heat to high and cook for 10 minutes or until all liquid is absorbed. Stir occasionally to prevent pasta from sticking to skillet.
- Remove from heat and stir in tuna fish, pesto and artichoke hearts.
- Immediately before serving top with tomatoes and Parmesan cheese.
You can easily find the Barilla Pronto Pasta and Pronto sauces (like the basil pesto sauce I used) at Walmart in the pasta aisle.
