I always thought the typical pasta recipe was basically the simplest meal to make. That was until I discovered the one-pot pasta phenomenon!
And now I don’t think I’m ever going back to boiling noodles separately.
Honestly, I was a bit hesitant when I first started seeing these one-pot recipes pop up all over Pinterest.
However, when I saw my friend Katie’s post on this How to Make One-Pot Pasta tutorial I thought I would finally give it a try myself.
Boy am I so glad I tried it! You literally add everything to one pot, no draining required.

Dietitian’s Dish
It’s no surprise that I chose to add kale to this pasta dish.
I’ve been in love with kale for a while now. I especially love adding it to salads like these kale and kohlrabi and kale and feta salads.
Benefits of Kale
- Kale low in calories, about 33 calories per cup.
- It’s also rich in many vitamins like vitamin C (an antioxidant), vitamin K (involved in blood clotting) and at least a dozen other vitamins and minerals.
- It’s very versatile and holds well when cooked. Kale can be steamed, stir-fried, roasted or added to smoothies and salads.
Tips on How to Add More Veggies to Your Day
- Chop veggies like onions and peppers right away after visiting a grocery store. Sauté them in a skillet for an easy side dish to eggs in the morning.
- Cut up raw veggies like carrots, cucumbers and bell peppers at least once a week and store them in one container. Before lunch and dinner, place them in a common area of the kitchen for an easy snack to grab.
- Roast vegetables like carrots and broccoli. They go with almost any main dish you might serve.
- Make at least one vegetarian meal like the One Pot Kale Pasta recipe each week.

The best part about this type of pasta dish is that you can add just about any kind of vegetable.
Depending on your personal preferences, you could add cauliflower, broccoli, spinach (added last), mushrooms, etc.

One Pot Kale Pasta
Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 1 green onion, chopped
- 1 red pepper, chopped
- 2 teaspoon minced garlic
- 1 (24 ounce) jar pasta sauce
- 3-4 cups kale, chopped
- 5 cups water
- 10 ounce whole wheat penne pasta
- Parmesan cheese
Instructions
- In a large skillet add olive oil and garlic over medium heat.
- Add onions and peppers and cook until vegetables are crisp-tender (about 10 minutes).
- Add pasta sauce, kale, water and bring to a boil.
- Next add pasta and let boil for about 15 minutes or until pasta is tender.
- Serve with Parmesan cheese.
