This One Skillet Vegetable and Bean Gnocchi is a nice change from regular pasta night including nutritious ingredients like spinach and kidney beans.
This past week has been quite the whirlwind of gatherings with our new neighbors. From play dates to fireworks parties and barbecues, we’ve all been having a blast.
Little did we know what we were moving into when we chose to purchase our new house. We are so thankful for our new friends that it almost feels surreal since it’s such a vast difference from our previous neighborhood.
And the best part is the families we are socializing with all have kids similar ages to our kids. And they all play so nicely together, it’s amazing!
This past week I decided to take a break from grilling and make this skillet recipe. I’ve wanted to make some type of recipe with gnocchi for a while now since I’ve eaten it at restaurants but never at home.
If you’re unfamiliar with it, gnocchi are soft potato dumplings found in many Italian dishes. Gnocchi is often in place ofregular pasta.
You could always make them homemade. However, I went the simple route and used a store-bought version which takes only about 5 minutes to cook.
And I’m thrilled I finally used my curly parsley from my garden!
It’s seriously thriving I just haven’t thought about using it until now.
I typically use parsley all the time in recipes but with so much grilling lately, I haven’t thought to use it.
The recipe is quite simple. It takes only about 10 minutes of prep work. So it’s great for any day of the week.

One Skillet Sausage Vegetable and Bean Gnocchi
Ingredients
- 1 medium onion chopped
- 1 red pepper chopped
- 2 teaspoons minced garlic
- 1 13 ounce package turkey sausage
- 1 14.5 ounce can diced tomatoes
- 1/4 cup water
- 1 17 ounce package gnocchi
- 1 15.5 ounce can kidney beans, drained and rinsed
- 3 cups fresh spinach
- 1/2 cup mozzarella shredded
- 1/2 cup Parmesan cheese
- 1/4 cup fresh parsley
Instructions
- In a large skillet over medium high heat, add garlic, onion and red pepper.
- Saute until tender.
- Add turkey sausage, water, tomatoes, gnocchi and beans.
- Turn heat up to high and cook for about 5 minutes or until gnocchi is fluffy.
- Stir in spinach until wilted.
- Top with mozzarella, Parmesan cheese and parsley.
