Any other stay-at-home moms getting nervous about summertime?!

We have only two weeks to go before everyone is on summer break in my house. On one hand, it’s great since you have much less of a schedule, there’s no need to pack daily lunches, no homework help needed and no worrying about a strict bedtime so kids aren’t a mess the following few days.

Maybe that’s just in my house, but my kids sure do need their sleep!

On the other hand not having much of a schedule can also mean more sibling fighting, complaining more and kids acting like there is nothing to do.

I’m taking a little more of a proactive approach to this summer and planning a few things ahead of time like a few half-day church camps.

And thankfully this summer I plan to have lots of friends over for playdates to hang out at the beach as well as getting together with the families in our neighborhood.

We honestly didn’t know what we were missing until we moved to this new city and neighborhood.

It’s amazing the difference when you have kids in your neighborhood that are similar ages to your own kids and parents who want to socialize!

I am also considering putting together a bucket list with my kids but keeping it simple. I want it to be used more as a list of ideas rather than a must-do list that will end up stressing me out.  

Now on to the recipe. I have said many times that I plan to grill practically all summer but there are always times when I’d rather not like when it’s crummy weather!

That’s when I decided to make this oven-roasted asparagus recipe.

It was super simple and I still only had one pan to clean.

If you’d rather grill it (which I often do), just add it to a grill rack or foil. Asparagus grills very easily and quickly! Or, if you prefer sautéing, check out this Stovetop Asparagus Recipe. It’s super simple to make too!

Typically I make more than enough food for our family so we have plenty of leftovers.

It just makes sense to cook once, serve twice.

However, there are a few foods (like asparagus) that just taste so much better right out of the oven.

So when you’re cooking this recipe I suggest making just enough for dinner tonight and save the rest for later. And since it only takes about 5 minutes to prep, it’s worth it.

Oven Roasted Asparagus with Garlic Lemon & Asiago Cheese

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients
  

  • 1 bunch of asparagus
  • 2 tablepoons olive oil
  • 1/2 teaspoon garlic powder
  • juice from one lemon (about 2 tablespoons)
  • salt and black pepper to taste
  • 1/4 cup Asiago cheese, shredded

Instructions
 

  • Preheat oven to 400°F. Coat a rimmed baking pan with aluminum foil and spray with non-stick cooking spray or olive oil.
  • Rinse and trim ends of asparagus and place on baking pan.
  • Drizzle asparagus with olive oil, coating well.
  • Sprinkle with garlic powder, lemon juice, salt and black pepper.
  • Roast for about 15 minutes or until asparagus is crisp-tender.
  • Remove from oven and sprinkle with Asiago cheese.
