These cute Patriotic Strawberry Cheesecake Bites are simple to make, semi-nutritious and will appease even your youngest critics!
I tasted my first strawberry cheesecake bites this past Easter when my sister decided to surprise us with dessert.
Well let me tell you, they were phenomenal!
I couldn’t remember her exact recipe but I’m pretty sure she used regular cream cheese, powdered sugar and almond extract in addition to vanilla extract.
With today’s recipe I decided to use reduced-fat cream cheese a.k.a. Neufchâtel cheese (because that’s what I had on hand), powdered sugar and vanilla extract for the filling. My kids were actually eating these as I was making them. They were that irresistible!
Easy Steps to Make These Strawberry Cheesecake Bites
First, begin by prepping the strawberries by cutting off the tops and taking out a bit of the middle.
Next, blend the remaining ingredients together until smooth.
In case you don’t own a piping bag, simply use a plastic resealable bag (sandwich size). Then, add the filling to the bag and cut a small hole in one of the corners of the bag.
Pipe the filling into each strawberry and top them with a blueberry. It’s that simple!

My family can’t get enough of strawberries which is fantastic since they are full of nutrition.
Strawberries are rich in vitamin C, folate, fiber and potassium.
Did you know that 1 cup of strawberries contains only 50 calories too? I’d say that’s quite a healthy snack!
This dessert does contain sugar and some fat, but everything in moderation, right?
Patriotic Strawberry Cheesecake Bites
Ingredients
- 1 pound strawberries
- 1/4 cup blueberries
- 4 oz. Neufchâtel cheese softened
- 1/2 teaspoon vanilla extract
- 3-6 tablespoons of powdered sugar depending on preference
Instructions
- Rinse strawberries. Cut off tops of each strawberry and hollow the insides out using a small knife.
- Beat Neufchâtel cheese, vanilla extract and powdered sugar together well using a mixture.
- Add filling to a resealable bag and cut a small hole in one corner (or use a piping bag).
- Pipe filling into each strawberry.
- Top each strawberry bite with one blueberry.
