This Roasted Acorn Squash is a simple vegetable side dish that is a perfect way to eat seasonally and nutritiously!
It’s that time of year to get to your produce store and stock up on winter squash since they are so cheap!
I love all kinds of squash, but especially winter squash like spaghetti, acorn and butternut varieties. There are so many ways to cook squash you will never get bored if you keep changing it up!
To tell the truth, I bought two acorn squash without a clue what to make with them.
I have made stuffed acorn squash in the past but wanted a quicker, simpler recipe this time around.
This time, I simply sliced the squash, making sure I have a sharp knife so I don’t cut myself! Then, I sprinkled it with olive oil and seasoning and roasted them for 20 minutes.
Simple as that!
To my surprise, my kids even tried them right out of the oven.
And since we are in the I don’t recognize it, I don’t want to taste it stage, this was a major mom win!
Dietitian’s Dish
I am always amazed when one of my children decides they all of a sudden don’t “like” a specific food even though they have loved it in the past.
However, the number one thing I try to remind myself is they are little people. What I mean is they are just like us adults. Sometimes we feel like eating a specific food and sometimes we just aren’t in the mood for it.
When they say they don’t want to eat what I have made (typically the main dish) for one reason or another, I still encourage them to taste a bit. But I also serve plenty of other side dishes (vegetables, fruit, dairy) that I know they will eat.
This not only allows them to have the independence to choose what they want to eat, but I also know they are still eating nutritious foods.
Roasted Acorn Squash
Ingredients
- 1 acorn squash sliced about 1/2 inch thick
- 1/2 teaspoon garlic powder
- 1/2 teaspoon thyme
- salt and black pepper to taste
- olive oil
Instructions
- Preheat oven to 400°F. Coat a rimmed baking pan with aluminum foil and spray with olive oil.
- Place sliced acorn squash evenly on baking pan.
- Spray or drizzle squash with additional olive oil.
- Sprinkle seasonings over top of acorn squash.
- Cook for 30 minutes or until squash is tender.
