This roasted asparagus with feta cheese recipe is the perfect combo of flavors and pairs well with just about any meal!
This roasted asparagus dish is perfect for having company over since it looks fancy but is super simple to make.
This is my second Recipe Redux post and this month’s challenge is named “Spring Cleaning.”
The goal was to find a condiment/spice/ingredient in your cabinet that you haven’t used in a long time. I loved this idea since unfortunately, I tend to buy too many spices for a particular recipe, but then end up never making the recipe.
This leads to a cabinet full of too many unopened spices.
So when I browsed my cupboard I came across plenty of spices I could use and decided on lemon peel.
I know it’s not too unique of a spice, I just have never cooked with it. I believe I purchased it about two years ago, and it was still unopened.
So I decided to put it to good use and add it to one of my favorite spring vegetables…asparagus.
I absolutely love springtime!
I live in Michigan, so I can’t wait to kiss the cold winter days goodbye and say HELLO to warmer weather. Yes, it’s April and still feels like winter.
Springtime vegetables like asparagus aren’t too bad either. I would have to say asparagus is my favorite vegetable, so much that my husband and family may get sick of me making it so often when it’s in season.
I try to combat that by making various recipes with them.
This recipe is one of those.
I added cheese (because who doesn’t love cheese?!) and plenty of seasoning to give this asparagus just the right combination.
I actually made this for my family for Easter and they loved it!
Want to know the best part? It takes about 5 minutes to prep and only 10 minutes to cook!
Simple Steps to Make This Roasted Asparagus with Feta Cheese
- Start by coating a baking pan with olive oil. I love to use my Misto sprayer.
- You’ll notice that I always line my baking pans with aluminum foil when roasting vegetables since it saves so much time when cleaning up and leaves you with a cleaner pan.
- Then add the asparagus and spray them with olive oil again.
- Next, sprinkle the seasonings and feta cheese over top of the asparagus.
- And finally, cook it for 10 minutes at 425 degrees Fahrenheit and you’re done!

I was still able get asparagus at the farmers market yesterday and was excited to try this recipe to go along with grilled pork chops for dinner tonight. It was delicious! Even my 7 year old son replied with "Yum!" after being asked what he thought. :) Loved the spice combination. Looking forward to checking out the rest of your site.
