Ever since I visited the pork farm last fall I’ve been getting serious about cooking all kinds of pork dishes.
Pork is so easy and versatile, especially considering the various cuts available.
And since grilling season has finally begun here in Michigan I was thrilled to discover Smithfield® Marinated Fresh Pork.
It’s so simple to cook with and get dinner on the table fast.
These seasoned pork tenderloins can easily be grilled outside in about 15 minutes which was my original plan.
Unfortunately, when it came time to cook this recipe we were in the mist of several days of pouring rain with little breaks in between to grill.
I ended up roasting the tenderloin in the oven which really was simple too, just took a little bit longer.
Thankfully Smithfield® products are 100% real pork and most of the tenderloins, loin filets and roasts are pre-marinated.
This really cuts down on the time spent in the kitchen, yet still allows you to make homemade meals.

Do you know how I like to not spend much time in the kitchen?
That’s why I love recipes like this one. I cooked the entire pork tenderloin (which was about 1 1/2 pounds). And I only used 1 pound in this Roasted Pork Tenderloin Pesto Pasta recipe.
Then I used the leftover pork the following day and served it with roasted broccoli and brown rice.
Two meals in one!
Besides grilling and roasting, you can also sauté the pork. There are so many meal options any day of the week.
Roasted Pork Tenderloin Pesto Pasta
Ingredients
- 1.5 pounds Smithfield® Roasted Garlic & Herb Loin Filet
- 1 pound Farfalle pasta
- 1 tablespoon olive oil
- 2 teaspoons minced garlic
- 1 medium onion, chopped
- 1 cup asparagus, chopped
- 1 cup canned artichokes, quartered
- 1 (6.3 ounce) jar basil pesto
Instructions
- Preheat oven to 375ºF.
- Add pork loin to a shallow pan and cook according to directions (mine took about 40 minutes for a 1.5 pound loin). Cut pork loin into slices or small pieces.
- Cook pasta as directed.
- While pasta is cooking add olive oil, minced garlic, onions and asparagus to a large skillet. Cook over medium heat until vegetables are tender.
- Stir in artichoke hearts, pesto and cooked pork loin.
Notes
I found the Smithfield® Marinated Fresh Pork at my local Walmart in the Meat and Poultry section where they not only have the roasted garlic and herb marinade, but several other flavors such as Applewood Smoked Bacon and Slow Smoked Mesquite Flavor to name a few.

so funny my husband pointed out the other day pork tenderloin and said "let's just roast it" ... well okay then! Pasta makes it even better!
