Roasted Red Pepper Hummus Cucumber Bites

Hummus is one of my family’s favorite snacks.

My newest favorite way to eat hummus is to use it as a spread on grilled cheese and turkey/ham sandwiches – an awesome combo!

My youngest child prefers to eat it with a spoon. And since he’s not even two years old yet I allow it most of the time.

If I let my 3 and 5-year-old do that they would both easily eat an entire container in one sitting…no joke! 

These cucumber bites are an excellent appetizer to bring to tailgating or fall parties.

By using feta cheese crumbles and pre-shredded carrots, they take only about 10 minutes to prep. After slicing the cucumbers, I used a teaspoon measuring spoon to scoop out most of the seeds, leaving a small layer at the bottom of each bite.

Beans, such as chickpeas found in hummus, are an excellent source of vegetable protein.

Eating only two tablespoons of hummus (like 2 of these cucumber bites) will fulfill the recommended amount of beans you should consume daily.

Roasted Red Pepper Hummus Cucumber Bites

Ingredients
  

  • 2 cucumbers sliced into 1-inch circles
  • 1/4 cup shredded carrots
  • 1/2 cup feta cheese
  • 1 cup Sabra Roasted Red Pepper Hummus

Instructions
 

  • Slice each cucumber into 1-inch circles.
  • Scoop out most of the seeds in each wedge and place about 1 tablespoon of hummus into each bite.
  • Insert 3 shredded carrots pieces into each cucumber bite.
  • Sprinkle feta cheese over top of each cucumber bite.
  • Serve chilled.
