This Sheet Pan Sweet Italian Sausage and Vegetables is a simple way to get dinner on the table in 45 minutes or less. And all it takes is chopping a few veggies to get this delicious dinner to come together.
Are you sick of one pan dinners yet? Good, me neither.
Really, how could you get sick of quick nutritious meals that are adult and kid-friendly?
If you have children you know the struggles of planning meals for the entire family to enjoy.
It’s definitely not a science. It’s basically luck. On any given day one child will LOVE a meal that I make.
And then I make it again the following week and they want NOTHING to do with it.
And don’t try to fool them by adding a sauce or spices to the vegetables that are different than what they are used to.
In all seriousness, I try to remind myself that kids are just like adults in that they aren’t always going to feel like eating a certain food even if they have in the past.
However, I do emphasize to them that I took the time to make the food and I’d appreciate it if they would try to food. This usually results in them eating more than half of what I served them).

All food groups have a purpose since each provides unique nutrients, vitamins and minerals.
When it comes to vegetables I like to focus on eating a variety of them.
However, bright-colored (orange and yellow) definitely have some strong nutritional content.

Sheet Pan Sweet Italian Sausage and Root Vegetables
Ingredients
- 1 pound smoked turkey sausage links
- 3 carrots sliced into circles
- 5 medium red skin potatoes chopped
- 1 small butternut squash peeled and chopped
- 1/4 cup maple syrup
- 2 tablespoons balsamic vinegar
- 1 1/2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1 teaspoon parsley
- salt and pepper to taste
Instructions
- Preheat oven to 400°F. Cover a rimmed baking pan with aluminum foil and spray with non-stick cooking spray.
- Combine all ingredients into a large bowl.
- Stir until sausage and vegetables are well coated.
- Place sausage and vegetables on baking pan.
- Cook for 30 minutes or until vegetables are tender and sausage is thoroughly cooked.
