- baking powder
- cinnamon
- salt
- milk
- vanilla extract
- eggs
- maple syrup
- frozen or fresh berries (blueberries, strawberries, raspberries, blackberries)
Simple Steps to Make This Baked Oatmeal with Berries Recipe
I love when I have recipes that are versatile, allowing you to swap out ingredients.
This one is great since you can use any type of milk you have on hand. You can also use any type of berry – frozen or fresh.
- Start by combining the dry ingredients – oats, baking powder, cinnamon and salt. Stir these ingredients until they are combined.
- Next, add the wet ingredients including the milk, vanilla extract, eggs, and maple syrup.
- Mix well until all ingredients are thoroughly combined.
- Don’t worry, if it looks “soupy” that’s okay. It should be since oats soak up a lot of liquid.
- Now, stir in the berries of your choice.
- Finally, add the mixture to a 1 1/2 – 2 quart baking dish sprayed with non-stick cooking spray.
- Bake at 375F for 40-45 minutes or until the top is golden brown.

Simple and Healthy Baked Oatmeal With Berries
Ingredients
- 2 cups old fashioned oats
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 cups milk any type you prefer, I used skim milk
- 1 teaspoon vanilla extract
- 2 eggs
- 1/3 cup maple syrup
- 2 cups mix of frozen or fresh berries (strawberries, blueberries, blackberries), extra for toppings if desired no need to thaw frozen berries
- Optional: top with chopped pecans or walnuts
Instructions
- Preheat oven to 375F. Spray a 1 1/2 – 2 quart casserole dish (or 8 x 8-inch pan) with non-stick cooking spray.
- In a medium-size bowl, combine the oats, baking powder, cinnamon and salt.
- Add the milk, maple syrup, eggs and vanilla and stir well.
- Stir in the berries.
- Pour the mixture into thr casserole dish and bake for 40-45 minutes or until the oatmeal is set and is golden brown.
