This Simple Roasted Broccoli recipe makes the perfect crispy broccoli every time and can easily be served with any meal!
This recipe is so simple I almost didn’t post it.
However, I have so many people ask me how I cook my vegetables so I thought I better write it down.
The best part is my kids LOVE roasted vegetables, especially broccoli.
Typically, I make them just with a few simple spices like this recipe but once in a while, I’ll change it up by adding Parmesan cheese (which the kids love to add themselves).
Simple Ingredients Needed to Make This Simple Roasted Broccoli Recipe
- Frozen broccoli florets
- Italian seasoning
- Garlic powder
- Black pepper and salt to taste
- Olive oil
I will roast almost any kind of vegetable but my favorites are green beans, red skin potatoes, zucchini and California-blend vegetables.
I almost exclusively buy my frozen vegetables from Sam’s Club since they come in such large quantities.
And since I have a deep freezer so I can stock up.
The vegetables typically come in a pack of 4 (16 ounces each) and look like the picture below.
Previously I used to steam vegetables all the time using this steamer but then discovered the amazing technique of roasting vegetables and love it!
The texture of the vegetables turns out perfectly to me with the perfect blend of crisp-tender.
Now, of course, I will still steam vegetables once in a while like when I make my favorite mashed cauliflower but most of the time I roast them.
Dietitian’s Dish
As you may notice I use olive oil almost exclusively when cooking. It’s versatile enough to fit into almost any recipe and has excellent healthy fats.
One tablespoon of extra virgin olive oil has 10 grams of monounsaturated fat. This is the most heart-healthy kind of fat that can help reduce the risk of heart disease.
However, all oils are calorically dense so I still use them sparingly. This is one reason I use the Misto spray to help watch how much oil I use when cooking vegetables.

Simple Roasted Broccoli
Ingredients
- 2 (16-ounce) bags broccoli florets (frozen or fresh)
- 1-2 teaspoons Italian seasoning
- 1/2 teaspoon garlic powder
- black pepper and salt to taste
- olive oil
Instructions
- Preheat oven to 425°F.
- If starting with frozen broccoli, microwave broccoli in two batches, each for about 5 minutes or until they are thawed.
- Line a rimmed baking pan with aluminum foil and spray with olive oil. (I use a Misto sprayer)
- Place broccoli on baking pan in one layer and spray with olive oil again.
- Sprinkle seasonings over broccoli.
- Cook for 20 minutes or until the broccoli is crisp-tender.
